- You need 1/2 kg of raw mango, cleaned and cut into small square pieces.
- You need 2 tbsp of ginger garlic paste.
- It's 3 of green chillies chopped.
- You need 1 handful of curry leaves.
- You need 1 tbsp of mustard.
- It's 1 tsp of fenugreek seeds.
- You need 1 cup of half vinegar and half water.
- Prepare 1 tbsp of Asafoetida powder.
- It's 2 to 3 tbsp of Kashmiri chilli powder.
- Prepare as per tatse of Salt.
- Prepare 4-5 tbsp of gingerly oil.

- Mix the cut mango pieces with salt and chilli powder.And keep aside for 5 to 6 hrs..
- In a deep bottomed pan add oil,then fenugreek,when it starts to splutter add mustards.add ginger garlic,green chillies saute well.add then the curry leaves and saute untill it's water dries out completely..
- Then add vinegar mixture.when it boils add the mango pieces and asafoetida.and mix well.let it boil for a few minutes.till the gravy starts to thicken. Put off the flame and remove from the stove top.
- Check the salt.let it remain in the pan for 1 day and then remove it to a glass bottle.and enjoy with your meals..
