1. It's 1 lb of chicken-- cut up.
2. It's 1 tbsp of cooking oil (to cook chicken in).
3. Prepare 1 lb of shredded cheddar cheese.
4. It's 1 packages of taco seasoning mix( i like taco bell).
5. You need 1/2 cup of water.
6. You need 8 of flour tortillas.
7. It's 1 tbsp of cooking oil(to fry quesadillas).

Tinklee's Chicken Quesadillas step by step

1. in fry pan heat oil over med-high heat, add cut up chicken, cook until chicken is done.
2. add seasoning packet and water, turn down to low, simmer until thick.
3. divide chicken into 8 portions(I just divide in the pan) place one serving of the chicken mixture in the middle of the tortilla.
4. divide cheese into 8 portions, place one serving on top of chicken, fold tortilla over in half.
5. heat pan to fry tortillas, I add just a touch of oil at a time to the pan, fry until tortilla is golden brown, then flip and fry the other side, when both sides are golden brown remove and place on a paper towel(brown paper sack works best), and slice into quarters and serve.
6. I serve with sour cream, salsa.
7. olives can be added if you want, or peppers to the chicken and cheese.
