- Prepare 1 of 1 big jalapeño sliced & cut in half (keep seeds if desired).
- It's 4 of Baby tomatoes sliced about a cm thick.
- Prepare 1 slice of Pepper jack cheese.
- It's 2 tbsp of Three blend shredded cheese.
- You need 1 oz of Olive oil to coat pan & brush on bread.
- It's 2 slice of Rye & pumpernickel swirl bread.
- Prepare 1 tbsp of Dry minced garlic.
- Prepare 1 tbsp of Oregano.
- You need 1 tsp of Greek seasoning.
- It's 1 dash of Salt.
- Prepare 1 dash of Red pepper flakes.
- Prepare 1 tbsp of Cilantro chopped fresh.
Tomatopeno & Cheese Grilled Sandwich instructions
- Olive oil in pan & add jalapeños. Add salt, Greek seasoning, oregano. While those are cooking slice tomatoes & add them in after they are all sliced. Add garlic & more oil if needed. Let cool on skillet for about 5 minutes. ( once everything's cooked down) Brush oil on both slices of bread & set in the same pan you cooked on. Then add tomato jalapeño mix on top of one slice. Once toasted, add pepper jack cheese, red flakes, & shredded chews on top of tomatopeno mix. Cover with top until cheese melts & flip. Once it's toasted how you like take it out cut in half & enjoy..
