- It's 2-3 of Amlas: Grated.
- You need 2 of Carrots: Grated.
- You need 1-2 of Tomatoes: Chopped.
- You need 1/4 Cup of Green Peas.
- You need 1/8 Cup of Corns.
- It's To Taste of Salt.
- You need To Taste of Sugar.
- It's 1 of Onion: (Big- Sliced).
- Prepare 4-5 of Green Chillies: Slit.
- You need 1/8 Cup of Pineapple Cubes: Optional.
- Prepare 3 tbsps of Ghee.
- You need 3 tbsps of Cooking Oil (Any).
- You need 2 tbsps of Cashews: Optional.
- It's of Tempering: 2 Bay Leaves.
- Prepare 2 of Slit Green Chillies.
- Prepare 1/2 tbsp of Garam Masala (Homemade).
- Prepare 1 of Mace/Javitri Floret.
- Prepare 1/4 tsp of Nutmeg Powder.
- You need 1 tsp of Black Peppercorns: Freshly Ground.
- You need 4-5 of Cloves.
- It's 1 of Star Anise.
- You need 2 of ” Cinnamon Stick.
- It's 3-4 of Green Cardamoms.
- It's 1 of Black Cardamom.
- It's 1 of Capsicum: Chopped.
- You need 4 Cups of Water (RT).
- It's 2 Cups of Basamati Rice.
- Prepare 1 tbsp of Pulao Mix.

- Wash the Rice & strain the water & keep it aside.
- Chop all the aforementioned veggies & keep readily available...Keep the Tempering Spices & rest other Masalas ready too.
- Grate the Carrots & Amla & set aside & also, in a large & heavy bottomed pan/wok/pressure pan, etc. Add in the oil & ghee, together over the medium-high flame.
- Add in the Tempering Spices to it, allow it to release its fine aroma & then add in the onions- sauté for 2 mins until translucent & then, add in the rest other chopped & grated veggies to it- one by one, add in the salt too & sauté for about 5 mins time.
- Once well sautéd the veggies- Add into it the washed rice & mix everything well together until all are nicely combined- at this point, add in the dry ground Masalas.
- Now, add in the measured water to it & also check out the salt & sugar & put some more (if at all required), & mix well- Put the cover of the pan, once it starts boiling- until, the Rice & veggies are all well cooked & done.
- Checkout once done, by carefully & gently stirring everything from upside down & turn off the flame & allow it to sit on its standby position for another 10-15 mins time, before serving hot with any raita/achar or sabji of your choice.
