Ingredients of Kerala Chicken Roast
- You need 1 kg of Chicken cut into medium pieces.
- You need 1/2 cup of Shallots sliced.
- You need 2 Tbsps of Ginger-Garlic paste.
- You need 1/2 Tsp of Turmeric powder.
- You need 1 1/2 Tsps of Coriander powder.
- You need 2 Tsps of Red Chilli powder.
- Prepare 3/4 Tsps of Pepper powder.
- You need 2 Tsps of Garam Masala Powder.
- It's 3 Tbsps of Lemon juice.
- It's to taste of Salt.
- Prepare 5 Tbsps of Coconut Oil.
- You need 3 1/2 Cups of Onion sliced thin.
- It's 3 Sprigs of Curry Leaves.
- It's 1/2 Cup of Coconut Milk.
- You need 1 sprig of Curry leaves.
- Prepare 1/2 Tsps of Garam Masala powder.
- Prepare 1 Tsp of Coconut Oil.
Kerala Chicken Roast step by step
- Grind everything under 'To Grind' into a coarse paste. Use half of this paste to marinate the chicken. Keep it for 30-60 mins..
- Shallow fry the chicken pieces in 3 Tbsp Oil in a non stick pan until both sides are light brown. Transfer to a pressure cooker..
- To the same pan add rest of the oil and saute Onion and curry leaves until onion turns light brown.
- Lower the heat and add rest of the paste from step 1. Saute until raw smell goes away and it becomes brownish black in color..
- Add the above mixture to the chicken waiting in pressure cooker. Add 2 cups of water. Wait for 3 whistles. Let it cool down..
- Transfer the contents to the pan and let the gravy thicken..
- Once its almost dry, add the coconut milk..
- Switch off the flame. Sprinkle the items under 'To Garnish'. Close the lid and rest it for 30 mins..
